Mix Fried Rice



Serves 4 to 6 persons :)

This is a basic recipe for fried rice that you can add to as desired.
If adding other ingredients, increase the number of eggs to 3 and quantity of sauces n spices.

Ingredients:1 - 2 spring onions
2 large eggs
1 tsp salt or to taste
1 tsp black Pepper or to taste
4 tablespoons oil for stir-frying
5 cups cold cooked rice
3 - 4 tablespoons light soy sauce or oyster sauce, as desired
3  cloves of Garlic (finely chopped)
4tbs green peas
1/2 cup carrot ( cut in cubes)
1/2 cup Capsicum ( cut in cubes)
3 tbs chicken boneless finely chopped ( fish and prawns can be use too)
3 tbs mutton (boiled and chopped)

Preparation:
Wash and finely chop the green onion. Lightly beat the eggs with the salt and peppe.
take chicken in a bowl, add some soy sauce, chinese salt, some salt n pepper marinate it for 15 mins and keep a side.
Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add eggs keep stirring, until they are lightly scrambled but not too dry.
Remove the eggs and clean out the pan.
Add 1 tbs oil, Add carrot and fry for 2 mins then remove and keep a side.
Add 2 tbs oil again and fry peas and capsicum for 1 min then remove from the wok.
add 2 tbs oil again and fry the chicken, after 2 mins add mutton or anyother meat, fry on low flame till cooked.
Than add the rice, all vegs and meat, Stir in the soy sauce or oyster sauce as desired.
When the rice is heated through, add the scrambled egg back into the pan.
Add salt and pepper to taste.
Mix thoroughly. Stir in the spring onion and cook for 5 more mins but dont cover the lid.
Serve hot.
Tip:
Dont cover the lid to remain the fresh colour of veg and cook it jst b4 serving.
Garnish with chopped spring onion leaves
